Grown at high altitudes of Yellow (Huang) Mountains in the Southwest of Anhui province, China and bathed in mountain mist, this is a pure healthful green tea. Frequently we call it as “Yun Jian” in Chinese, which ‘Yun’ in Chinese means ‘Cloud’ and ‘Jian’ refers to ‘tip’. Slender green leaves yield a pale brew with a subtle floral scent. The flavor is fresh and grassy, with a hint of sweetness and fruitiness, and it possesses little astringency. Its dark green wiry leaves are gathered at their peak of flavor and produce a pronounced fresh vegetal (grassy) and refined flavor. When brewed, it yields a bright golden-green liquor with a delicately herbaceous, slight sweet and slightly nutty flavor.
