You may find this tea serving in many Chinese restaurants, typically Cantonese style restaurants, all over the world. It is also one of the most common favorites among Gong Fu tea drinkers. Shui Xian oolong has its own rich amber-red infusion and distinct roasted, mineral, and floral (orchid) notes. The leaves are resilient to extended steeping times. The majority of Shui Xian shrubs cultivated in Wu Yi Mountain ranging from 30 to 40 years in age, reflecting the variety’s rise to prominence in the 1980s. The aroma evokes strong floral notes reminiscent of orchids and lilacs. It has a dense and silty body, yet it finishes with a persistent sweetness of stone fruits. Its liquor is a dark orange color with a sweet honey taste and a particular smoky note and lingering floral finishing. Drinking it is a very affordable experience for people who didn’t experience the Shui Xian. A traditional Gong Fu preparation using a Yixing teapot or Gai Wan is most suitable for this tea.
