• This organic tea is certified by Institute For  Marketecology  (IMO), a member of European Community (EC), in accordance with the rules of USDA National Organic Program (NOP).  It is a purely green tea grown with only natural organic fertilizers and no agricultural chemicals or pesticides. Also grown under diffused sunlight for twenty days before harvesting, this organic green tea, a non-fermented, has several unique features: an elegant curly shape and wonderful aroma. Infused, the fragrance with decent green liquor is mild but gripping. The taste is cool, refreshing, mellow sweet but striking. Moreover, it will leave you with a hydrated palette and will be great for detoxification and cleansing. The origin of the tea is from Huangshan Mountains, Anhui province, China.
• Many centuries ago, monks in Huangshan area perfected a technique now known as “pan-firing”. This is the step used to “kill green”, which means to stop or prevent oxidation and to keep the tea green. Prior to pan-firing, Chinese tea was steamed, a technique similar to what is still used in Japan now. By switching from steaming (which retains moisture) to pan-firing (which decreases moisture) they changed the craft of Chinese tea – a trajectory that modern tea-making is still following today.
