• Shui Xian (or Shui Hsein or Narcissus or Water Fairy) Oolong is a popular tea both in China and in the United States. The best Shui Xian bushes grow in Zhangping, Longyan, Fujian province in China. You may find this tea serving in many Chinese restaurants, typically Cantonese style restaurants, all over the world. It is also one of the most common favorites among Gong Fu tea drinkers. Shui Xian oolong has its own rich amber-red infusion and distinct roasted, mineral, and floral (orchid) notes. The leaves are resilient to extended steeping times. The majority of Shui Xian shrubs cultivated in Wu Yi Mountain ranging from 30 to 150 years in age, reflecting the variety’s rise to prominence in the 1980s. It has a dense and silty body, yet it finishes with a persistent sweetness of stone fruits.
• Drinking it is a very affordable experience for people who didn’t experience the Shui Xian. A traditional Gong Fu preparation using a Yixing teapot or Gai Wan is most suitable for this tea.
